Considering the start date, a task has either a planned start date (if it has not actually started), so that start = earliest start, or an actual start (if it has actually started), so that start = actual start.
Similarly, the finish date.
Switch to the Tracking Gantt view and the Tracking Table. Everything you need is there.

Updating the actuals will override and overwrite the start and finish dates. Start and finish are live fields and will update to reflect the current bar dates. If you want to show against the planned dates then you need to show baseline start and finish columns.

When updating actuals, open the Activity Details, click the activity you want to update and then check the started box, input the actual start date and enter % complete on the Duration% and repeat for each activity. If the activity is already 100% complete checked finished box and enter actual finished date.
