If you want to do this for 5 days the calendar settings would be;
Sunday work is 8:00pm to midnight
Monday is Midnight to 6:00am
Tuesday to Thursday as Monday
Friday is Midnight to 6:00am
Look at the MSP Night Shift Calendar this will give you a lead.

can i just expand on the question. i wish to start work at 20:00 (8pm) and finish 06:00 (6am). However MS Project will not allow me to do this, telling me that my end time must be after my start time, how can it set my working day to for example.
07:00 to 12:00
12:30 to 17:00
17:30 to 20:00
20:30 to 02:00
If you have a standard load of MSP then have a look at how MSP creates the Night shift calendar in “Project 1” when you open the software.
