I'm trying to collapse some but not all of the sub projects I have. Group and sort does it to a certain level, but is there a quick way to select a number of sub projects and expand or collapse them without having to affect the whole schedule?

you have 2 options
option #1
you can filter your projects that you want to collapse and expand
option #2
you can create a Project Portfolio and put the projects in there that you want to collapse and expand
All you have is "Collapse to". So if you need to open up some rojects that are at Level 1 and other at level 4 and none in between you will be doing a LOT of clicking.
