I would like to know, how updating through "Apply actuals" is different from "Update progress". In which situation we will use these options. At present, I am updating progress via Status tab in activity details. Is that wrong. Please explain.

Omer, you have been given incorrect information.
Update Progress is used when activities are progressing on schedule. This function directs the Project Management module to estimate progress for all activities as of the new data date you specify. Early Starts and Early Finishes are turned into Actual Starts and Actual Finishes, as appropriate. Remaining Durations are estimated.
Apply Actuals alludes to the process of processing timesheet hourly information to any schedule or a group of schedules. Activities may or may not change their non-resource status, depending upon settings.

I just wanna make sure that I understood it well, can we conclude it as:
Update progress is used to calculate planned percentage of completion for the project: which is PV.
Applying Actual will produce as buillt status of the project: which is EV.

You can do in two ways
1. Using Resource Usage profile icon present below the menu bar
2. Using Resource Assignment option,filter the resource you need to produce S-curve and then copy the same in Excel followed by selection of graph option from XL {doing manually for S curve .}
