What is the use of Update Process (Tools-> Process Update). When it is used. And what is difference between Appling actuals and Update Process?

It's Update Progress, not update process.
Usibng the update progress tool allows you to quickly progress multiple tasks on the asumption that everything happened as planned. ie if the early start and/or early finish of an activity is before the new data date, that will become it's actual start and/or actual finish.
Applying actuals allows you to tell Primavera when things actually happened, rather than when they hsould have happened.
In 95% of cases, I feel the update progress tool to be a tool for the lazy planner.
