Dear Gemma,
Sounds like a very nice project. Congraduations. We are assist you as much as you can. Mikes comment is correct.
You need to determine if you will have one Contractor at site or more than one. Are you from the Client/Engineer or Contractor side.
Generally, you will start with the suvery works and that is followed by Excavation works. Then you will start the Civil works with the necessary 1st fix works. The E/M usually starts after you remove the shuttering of your first slab.
Principal Contractor issues; They will have more control, they need a larger mobilization period, and their contact will be more detailed as well. You will need to monitor them well because they will have a lot of people at site, and most probably their documentation will be good and you wont have problems.
Because of the shape issue, you will need excellent office support with all the necessary technology that will hook up the surveying works to it. It will make life easier.
Your construction team will need to read the plan well and provide you with the necessary activities to complete the works.

Hi thanks for the comment, the arena is more of a music type arena (with different level seating facing a stage)...sorry i should have been clearer
I am interested in the M&E Side but i am also looking at potential principal contractor issues too.

Welcome to planning planet.
Are you looking at M&E specifically or the whole project?
An arena is like any structure - it will have its own unique problems whatever it is.
Timing the grass planting for the opening would be one thing to watch for.
There is an active member known as Steve the Bajan who will only help if you are going to use it for cricket.
Others will most likely pitch in with more specific advice.
