The best course of action is to read the conditions of contract and the specifications.
Then you determine what is required by the LEED certification. If you want to satisfy your manager, you can have the same comments and requirements shown in the schedule. This is cosmetics.
The idea behind the schedule is to make sure that you complete your deliverables. You can mentioned your deliverables as Requirement A, B, C, etc.
You have to make sure that you Schedule includes all the activities required to complete the deliverables as per your contractual scope of work.

Thanks for your suggestion. Im confused whether I have to add activities such as checking of water consumption? what is the best way for them to know we are conserving energy tru the schedule?

The LEED certification is about innovation in design to conserve energy. Your Landscape project design should take into consideration the utilization of the Sun, Wind, Light, waste, etc.
The basics of creating a schedule will not change. You need to determine the scope (this will be given to you and you do not need to design it) and then you need to find out how to go around building it step by step.
Step 1: Read the Conditions of Contract.
Step 2: Read the Specification, drawings and BOQs.
Step 3: Start with the Major Deliverables
Step 4: Start building each delivereable.
