I dont quite understand the "unit" youre refering to either. Is it related to resources or quantities (work volume)?
If you mean "resources" you can see the units assigned for each activity in several ways, e.g. in the "Resource Names" column in the "Gantt Chart"-view where they appear in square brackets or maybe better in the "Task Usage"-view by inserting the "Assignments Units"-column. Concerning earned unit you probably need to do something like Alexandre suggested in his first reply.
If you mean "quantities" you need to introduce e.g. "Number 1"-column where you then input the quantities / units for each activity. The earned unit you can then get by making a customized formula for e.g. the "Number 2"-column going like this: [Number1]*[% Complete]/100" (or % Work Complete if you prefer that). This Earned Unit (i.e. Number 2) will be updated automatically every time you change the %.

it is possible in MSP to enter a different DURATION unit for each activity, the same as WORK units; but this approach can be confusing, as the scheduler will have to add days to weeks, ... (MSP will do that without any mistake)
MSP is no really the software of choice for physical progress
I cannot see any mean to select the duration unit from the Duration field and display it in another column

I think that it can be simulated by assigning some dummy materials though this approach has some disadvantages. The number of these amounts may be high, they could not be used as an input for estimating durations, etc.
