The Fabrication process time depends on the item being fabricated.
Structural Steel is usually divided into four sections;
Light steel
Medium steel
Heavy steel
Extra Heavy steel
The manhours spent in production (complete item) usually depends on the weight of the item in case it is just structural steel.
The range can be from 9hours/MT - 100+hours/MT depending on the type of structure and the availability of required equipment.

Whilst allocating the durations for the welding activities, do not forget to allocate enough time for the "Fit-Up" phase the precedes the actual welding. That is, the edge preparation of both sides of the butt-weld, a tack weld in place, and an inspection by the QC Inspector of the quality of the Fit-Up process.
From my (limited) experience, the duration of the Fit-Up process can be overlooked and this may lead to inaccurate schedules.

Did you check the American Welding Society?
Or you can check the major welding companies like Lincoln and Esab. I am sure that they will have everything you want. It is a small call to your local supplier of welding materials. Definitely the manuals exist for a long time.
