As you said Umer, this presentation is for new joinees, please try to keep presentation as simple as you can.
for the freshers who just came out after their grads, its important for you to give brief description of over all planning process. Importance of this presentation is to understand the role of planning scheduling in the organsation.
So try to keep it simple with some daily routine examples for planning.

I will never suggest projecting a complete plan , unless, it is a pure schedule discussion.
I strongly recommend a power point presentation with the following :
1) Brief project description
2) Description of Phases/ Milestones with dates in a tabular form
3) A collapsed schedule , showing only top level activities.
[Overall Schedule]
4) A bit more detailed schedule of the Topic of discussion or the Activities planned for the week
5) Activities planned for next week / month
6) Risks / Issues / areas of concern
7) Photo graphs
You may show a photo graph of the current status along with a computer generated image of the final product , at the beginning itself.
This usually have great effect on the audience !
Search for nice ppt templates online and use one.

Why use PowerPoint?
You can use your planning software to much better effect.
If you want to use PowerPoint then a good trick is to set up the picture on the screen with your planning software and then hit CTRL + Print Screen.
The image can then be pasted into PowerPoint and formatted and trimmed to size.
