In MS Project 2003 (its probably similar in 2007) theres an option in Tools->Options->Scheduling called New tasks:, which you can configure to the current date or the project start date. Of course ideally every task in your schedule should be linked to a predecessor.
When constructing a schedule from scratch is it often useful to create a milestone called Project Baseline Start with an Actual Finish set to the current date. This can be linked to any tasks that are due to start immediately.

I hate Microsoft Project and never use it unless I have to.
You can - I beleive - do a global search and constraint removal.
There is also a default setting somewhere that sets the attributes for new activities - the standard is to put a constraint on every activity - just plain bonkers.
You have my deepest sympathy having to use such rubbish.
