If I have to allocate a gang of 75 carpenters for the entire project, should I enter 7500% in the max units column in the resource sheet and later as per the quantum of work in the task and duration I enter the required carpenters for them?

There are several ways, some of which are not recommended.
This one is good:
Go to the Resource Sheet View and create and define them first.
Then go to the Gantt Chart View, select a task and use the assign resources icon/button on the toolbar to show the Assign Resources dialog... etc.
