Calendars are 100% identical in MSP 2007 and 2010.
It is not very long to create a non-working day in 2007 / 2010; what is much longer than before is to create a non-standard working day, say if you want to make a Saturday a working day
It isnt that much longer, e.g. a 3 weeks summer holiday is easily created by clicking on the first day in the calendar, holding "Shift" down and clicking on the last date. So consecutive non-working days are as easily created as before.
Non-consecutive non-working days takes a bit longer to create than before, but the name could just be "x" for all of them, so e.g. making every 2nd Saturday a working day as we have on some of our projects would only take maybe 1-2min longer than before for a whole calendar-year.
The above is valid for MSP 2010 - dont know about MSP 2007.

setting-up a calendar in MSP 2007 / 2010 is indeed much longer than before; the plus is that your are now able to name the days off, the way Primavera P3 and PM6 and long ago Computer Associates SuperProject have done for decades;
for sure the process in even longer in MSP; but what can we do except putting MSP aside and using some other more convenient software?

1. when you create a new project calendar, you have to change the project calendar in Project, Project informations, not in Task informations for every task
2. if you are using ressources, MS Project defaults the resource base calendar to Standard (or Default), whatever the project calendar is; you will change the resource base calendar in the Resource sheet
3. MS Project only uses ONE equality between weeks/days and working hours, defined in Tools, Options, Calendar; therefore if you are using a calendar A with 5 working days a week (= 40 hrs) and a calendar B with 6 working days a week (= 48 hrs), be careful always to enter durations in days, because 1 day still = 8 hours
Have you changed the standard calendar or made a copy of it? If you’re using the copy you’ll also have to change the task calendar from ‘None’ the calendar you’re using, otherwise MS Project defaults to the standard calendar.
Have you got resources assigned to the task? If the resource calendar is different to the task calendar it could show resource unavailability as gaps in the Gantt and adjust durations accordingly.
Most of the time this happens due to discrepancies between calendars.

Or, alternatively, no need to ditch MSP.
Use the software properly and it works.
Ignore uninformed advice to the contrary.

Hi Kenny
First Check your work patterns.
Then check any resource allocations to make sure they are on the same callendar.
If none of that works then ditch MSP and get some real software.

Hi Karen
What on earth are you doing setting up a single activity of 48 weeks?
No single activity should be more than 10 working days.
Please apply bottom up planning principles.

Imam,
select the seven days of the week by clicking the mouse on every of the seven column headers (from M to S),
then click "Non standard working time"
change the working hours when necessary

Be Careful in MSP in Changing Calendars
If Default Hrs Per Day is 8
And The Changed Working Hour does not matches it
there will be duration errors

Hi Karen,
It could be a couple of things.
