I’m not sure of the terminology for the French MS Project version, but you can use the Gantt Chart Wizard (Format > Gantt Chart Wizard).
As you scroll through the Wizard, you’ll see a radio button entitled ‘Custom task information’. You should be able to align the text as you wish using this option.
I think you can also format the bar styles as well (Format > Bar Styles > Text tab).

Sorry I misunderstood your post, I don’t think you can change the alignment for text inside the bar. There is only the default (align left).

But in my French Version of MSP (2002)
you can chose what text you show right or left
of the bar or inside the bar,
but what I would like to do is not only chose
the text (remarks as a matter of fact)
but also center it in the middle of the bar
I see no option either in
Custom task information’
(Infos sur la tâche personnalisées)
or in Format > Bar Styles > Text tab
