"S" curve is used to see your project progress forecast. Basically you may measure your progress without a "S" curve, but you cannot see if your progress is on time with the plan. The "S" curve sets the planned progress against which you will measure your actual. And to me this is an extremely important tool.
First you have to put resources in your activities (from activity form, resource tab)
You have to create a resource name in the resource form, then, on the "budgeted quantity" line insert the number of man hours you need to complete that activity
By default, make sure you do not check "driving" item; this would make your activity duration resource dependant, and it requires a great deal of knowledge to keep your project under control.
Once all your activities have been populated with resources, you can select "view/resource profile"
And see your S curve. Look in "display" tab to select options you want to see, and youre on your way to start playing with the "S" curve

A typical S-Curve contain the following
1. Actuals Prior to data date
2. Planned Curve from Date 1 to end of the project
3. Forecast Curve from data date to the end of the project
4. (Optional if you using EVMS) is a Earned value curve
P3 can easily produce these curves in the layout format
The calculation can be either base on unit(Hrs) or $
The S-Curve usually is use to analysis the trend of the projects as well as production rate , attacking angels (Progress) ...
I posted an S-Curve generated by P3 in two of the forum message. You can check it out
