In order to have the hammock show the earliest start date of a series of activities you need to link them as SS with the Hammock activity. Same applied to Finish date.

P3 specifies that the predecessor(s) to a hammock must be SS and the successor(s) must be FF. BUT it allows you to enter any relationship type (e.g. SF, with lags) but these relations are just ignored. Daft, but there it is!

If your hammock has no predecessors P3 will assume that the hammock starts on the data date - regardless of any actual data you may enter.
If you already have a predecessor, make sure that you have input an actual start date on this activity. If there is no predecessor I suggest creating a milestone to signify the start of the project (start of PM activity) and designating this milestone as the predecessor of your PM hammock - enter your actual start against this milestone and you should be in business.
