your second question depends on the requirement of client.ie if they have a handover schedule then you have to constrain that floors to the agreed handover dates. otherwise it will show a float and you dont have to worry about it since it is a float available for the contractor to schedule his resources accordingly.
3. First fix and second fix will be linked to the final fixes and the final testing and commissioning of the rooms. First fix wall services obviously will affect the finishes. So better connect it to the plaster.

Even though the question is not very clear to me , let me try my understanding of ur Question.
1.If you define the must finish date : every activity goes beyond will be critical. If you leave open the longest path will be critical.
2.Punch list of All final activities will have LF as project finish but not the activities having predecessors. to explain... if you have puch list on the surface evenness of wall it has to done before the final painting is done not till the project complete.
